Andrew's Recipes

~ Broccoli, Feta and Orzo ~
(Main Dish)

Ingredients:

1/2 lb. Orzo (pasta)
One small head broccoli (florets and a wee bit of stem only)
2 tbs. Extra virgin olive oil
1 Small red onion, thinly sliced
1 cup Cherry tomatoes, sliced in half
1/3 cup Pitted Kalamata olives
3/4 cup Feta cheese, crumbled
1/4 cup Pine nuts, toasted
3 tbs. Fresh basil, chopped
1/4 cup Fresh lemon juice
1/2 cup Romano cheese

Instructions:

Steam broccoli, but not so much as to lose firmness.

Saute onion in oil until soft.
Add broccoli, tomatoes, olives, feta, pine nuts, basil and lemon juice.
Mix well.

Cook orzo in salted water, drain.
Mix with broccoli mixture and Romano cheese.
Serve hot.

Shrimp can be substituted for broccoli. If shrimp is used, sauté in same pan used for onions, pushing the onion to one side and then mix with onions, tomatoes, olives, feta, pine nuts, basil and lemon juice.
